In the history of the Independent Self-Governing Trade Union “Solidarity,” sectoral sections played an important role alongside the regional structure, especially those bringing together enterprises of key importance to the economy of the Polish People’s Republic. In the food industry, a particularly significant role was played by workers from 79 sugar refineries. In 1980, they established a dynamic nationwide Coordination Committee of Workers of the Sugar Industry within NSZZ “Solidarity,” which by the end of November 1980 had been joined by approximately 80 percent of employees. The book by Maria and Andrzej Perlak is the first comprehensive study of the complex issues surrounding this sectoral section, as well as the problems faced by Polish sugar refineries both in the final period of the PRL and in the Third Republic—a difficult time of systemic change and political and economic transformation.
